For me, the end goal of cooking is not to make great tasting dishes, but to eat great tasting food — hopefully sooner rather than later. With these recipes, my intent is to create the most authentic tasting ethnic dishes with the least amount of time and effort in the kitchen. Whenever possible, I try to stay true to the spirit of the original culinary traditions while using modern shortcuts and workarounds. Some of these recipes are from past classes, some have been written for future classes. I think you will find all of them simple in design, easy to follow, and mighty tasty. Bon appétit.
